Cuisinart CPC-600 1000-Watt 6 Quart Electric Pressure Cooker

Cuisinart updates a classic. Its brushed stainless pressure cooker is safe, easy to use, cooks up to 70 percent faster than conventional methods and cooks healthier, too. Steam trapped in the pot builds up pressure that creates hotter temperatures and the pot is so tightly sealed that vitamins and minerals can't boil away. Foods stay moist and flavors stay true.

Features variable pressure and temperature settings, plus Browning, Simmering and Saute functions for perfect roasts, stews, vegetables, cheesecake or custard. The Cuisinart Pressure Cooker is absolutely safe, with a lid that has to be locked in place before pressure builds and stays locked until pressure is released. Cook faster, eat healthier, with Cuisinart.

More Info: It has a 99-minute time and LED countdown display: 0-40 minutes = 1-minute increments; 40-99 minutes =5-minute increments. It also has cool-touch side handles, a nonstick cooking pot and a trivet.

Effortless Cooking
With the unit on and the LED displayed, press the MENU button to select the desired cooking function. The function light will flash.

Select Low or High Pressure setting. Press TIME to select number of minutes needed for pressure cooking. Time increases in 1-minute increments up to 40 minutes. Time increases in 5-minute increments from 40 to 99 minutes.

Press START/CANCEL to start cooking. The pressure cooker will begin to heat. The red float will rise as pressure builds. When the selected pressure level is reached, the light in lower right-hand corner of LED will stop flashing and remain lit. At this point pressure cooking begins and the timer will start to count down. The timer will not begin to count down until full pressure is reached, which may be several minutes after the red float has fully risen.

Pressure Cooker Settings

  • Low Pressure
  • High Pressure
  • Browning – This preset temperature allows cooking over high heat, without the lid, before pressure cooking. Browning foods in a small amount of fat in this way seals the outer surfaces of meats and vegetables, producing a visually appealing, flavorful exterior with a moist, tender interior.
  • Sauté – The preset temperature, done prior to pressure cooking with lid removed, allows you to quickly soften vegetables in a small amount of fat or liquid without browning, and to cook items such as rice (Arborio, brown, Carnaroli, white, etc.) for pilafs and risottos.
  • Simmer – This preset temperature allows you to cook liquids at a lower temperature. It is primarily used to finish cooking some items, i.e. to add ingredients to a risotto, sauce, or stew or to continue cooking process to achieve preferred texture.
  • Keep Warm – Holds and keeps cooked food warm for up to 12 hours. Automatic Keep Warm Feature: When LED display reaches, the pressure cooker automatically shifts to Keep Warm temperature. The Keep Warm light will turn on and unit will beep to indicate cooking is complete.

Here's the deal. Yes, the instructions are confusing (and somewhat contradictory). Being new to a pressure cooker I thought all I had to do was follow the instructions and everything would be fine. Not so fast. My first attempt resulted in burned chicken and raw pasta because all the steam was escaping from the side of the lid. Here's what Cuisinart told me: First, on the lid handle you'll notice a little metal "peg." When the lid is locked, the peg protrudes. Good to know. To lock the lid, position the lid so the pressure release valve is to the left side of the timer face; put it at about 10 o'clock, place it on top, and turn it to about 9 o'clock--at that point the peg should protrude. There's really no muscle involved; just getting it in the right position. Then...make sure the almost invisible circle on the pressure release valve is lined up with the little white dot on the lid. When it's time to release the pressure you'll turn it. I hope this helps everyone. So...zero stars for having to get a lesson in how to use the thing and 5 stars for when it works. Hope this helps the next person!

Great new break through in pressure cookers. Bought for wife, she loves it. Had a manual pressure cooker for many many years, now she would never go back, this one takes the chore out of cooking. Just set it and let it go.

I got this pressure cooker two months ago and so far I think it was a great purchase! I love the look, how easy it is to clean and how user-friendly it is. The only reason I didn't give it 5 stars is because it is smaller than it looks. You are not supposed to fill it more than 2/3rds of the capacity so its size is deceiving - it fools you into thinking it's pretty large when it isn't. Having said that, I am not sure there are many others that are bigger than this one? I definitely recommend it though.

I received this for Memorial Day and have been using it since then. Before I received this I found pressure cookers too much work and too dangerous to use. This appliance removes those problems. However, this appliance is not without a quirk of its own--i.e. you must make sure the float valve is clean and free moving before you start cooking or the appliance will shut off before it finishes cooking. Keep the float valve clean and you'll love your pressure cooker.
